Mole Negro Glazed Pork Belly Bites with Pineapple Salsa

Ingredients:

  • 1 lb pork belly, cut into small bite-sized pieces.
  • Salt and pepper
  • ½ cup of prepared Mulli Mole Mole Negro
  • 1 tbsp honey
  • Fresh small diced pineapple, red onion, jalapeño, cilantro, and tomato (for salsa)
  • Lime juice

Instructions:

  1. Add salt, pepper, and honey to the pork belly, already cut into cubes.
  2. Roast or grill pork belly cubes until crisp and tender.
  3. In a saucepan, warm Mole Negro.
  4. Toss cooked pork belly in warm mole glaze.
  5. Serve with a chilled pineapple salsa for a sweet, spicy balance.
