Mole Negro Glazed Pork Belly Bites with Pineapple Salsa

Ingredients:
- 1 lb pork belly, cut into small bite-sized pieces.
- Salt and pepper
- ½ cup of prepared Mulli Mole Mole Negro
- 1 tbsp honey
- Fresh small diced pineapple, red onion, jalapeño, cilantro, and tomato (for salsa)
- Lime juice
Instructions:
- Add salt, pepper, and honey to the pork belly, already cut into cubes.
- Roast or grill pork belly cubes until crisp and tender.
- In a saucepan, warm Mole Negro.
- Toss cooked pork belly in warm mole glaze.
- Serve with a chilled pineapple salsa for a sweet, spicy balance.
