Baked Sweet Potatoes with Chipotle Butter

Ingredients:
- 4 large sweet potatoes (sliced ½" thick)
- 4 tbsp butter, softened
- 2 tsp Chipotle powder. (If you want it to be spicier, add another tsp)
- 1 tsp cinnamon
- Salt to taste
- Olive oil
Instructions:
- Poke a few holes in the whole sweet potatoes, spread some olive oil on them, and season with some salt and pepper.
- Wrap the sweet potatoes in foil and bake them at 375°F for 35 minutes or until soft.
- Mix softened butter with chipotle powder and cinnamon.
- Serve warm sweet potatoes with a dollop of spiced butter on top.
Tip:
Open the sweet potatoes horizontally and sprinkle with a little bit of brown sugar or honey. I love the combination of sweet and spicy.
