PORK LOIN TOSTADAS

Ingredients:

Stovetop instructions:

  1. In a saucepan put the pork with the bay leaf, the roasted pork rub, garlic, and 1/2 onion. Cover it with plenty of water (you will need the broth for the sauce) and let it boil, once is boiling take it to medium heat and let it cook until the meat is tender.
  2. When the meat is done cut it into thin slices and put it aside.
  3. For the sauce, take 3 cups of broth from the meat, put it in a small saucepan with the tomatoes, let it boil 20 min. Blend the broth and the tomatoes and then return them to the saucepan with a little bit of oil and heat it again, add the Mexican oregano, vinegar, and try for salt and pepper, let it cook for another 5 min.
  4. For the assembling, take the tostada, put some pork slices, some lettuce, a tbsp of sour cream, and some cotija cheese. Then pour some of the sauce over the tostada. You can add some slices of avocado. 

Instant-Pot or Crockpot Instructions:

If you have a pressure cooker (instant-pot) you only need to cook the meat for 10 min in hi-pressure, or if you have a crockpot, you can put the meat in the night before on low and you will have your meat tender and ready the next morning.
